Maple Roasted Macadamias

Snacking can be hard on a low FODMAP diet, particularly if you’re on the go and can’t keep your food in the fridge. This recipe is a great way to make simple macadamias just that little bit more exciting! This method also works for other low FODMAP nuts such as peanuts, pecans and walnuts.

  1. Preheat oven to 200C (390F). Line a baking tray with baking paper or a reusable baking mat.
  2. Put the macadamias on the tray and place in oven, cooking for 20 minutes or until the nuts turn golden brown.
  3. Remove tray from oven. Carefully drizzle the maple syrup over the hot nuts, using a spoon to ensure each nut is coated in syrup.
  4. Place back in the oven and cook for a further 10 minutes.
  5. Remove from oven and immediately sprinkle over salt. Allow to cool completely before breaking up into pieces and store in an airtight container.
